This process of adding older components adds extra complexity and will give consistency to this style over future vintages. This wine is a blend of fruit from McLaren Vale and the Hunter Valley. Predominantly Shiraz, it also contains a very small proportion of Chambourcin and Merlot which were components of the original base wine. The large proportion of Shiraz gives rich, bold flavours, characteristic of Australian sparkling red styles.
