2008 Dessert Style Gewürztraminer
This wine was made from the balance of our own Gewürztraminer crop following the earlier harvest of a small portion for the drier style Hunter Valley Gewürztraminer. Left to fully ripen in this year's 'interesting' vintage conditions, the fruit was allowed to partially desiccate and develop intense rose petal aromas before picking. (The bees thought it was pretty good too!)
Stopping the fermentation at our desired level of sweetness has ensured a wine that is rich without having a cloying finish. Keeping the acid levels reasonably high has added balance and freshness to the finish. Not a style for the big pudding dishes, but much more for the lighter fresh fruit or blue cheese partnerships. Cellaring will certainly add a degree of complexity if earlier vintages are anything to go by.
