One of the questions we are most frequently asked is 'For how long can I Cellar this
wine?' The answer of course has many parts and is related to the available cellaring
conditions, the wine style involved, the vagaries of the closure and one's individual
preference for youthful freshness or the complexity brought about with time.
The ideal cellar should be constant temperature (ideally between 15°C and 18°C), slightly
humid and with minimal or no continuous light. Some wine styles are designed to age
gracefully and other to enjoy whilst young.
Corks, being a natural product vary enormously and even the most expensive hand-sorted
ones come without guarantee. Although we do experience (5% in some cases) cork tainted
wines, it is the bottle to bottle variation experienced by winemakers world wide that
has lead to the growth in usage of the screw cap. At Capercaillie, we colour sort all
our old white wines before re-release to minimize the likelihood of you receiving a
prematurely developed example. As of 2005 all our white wines and most of our red wines
will be sealed with a screw cap to ensure they always look their best. They will age
and develop just as gracefully as their cork sealed predecessors.
